FDA 483 - Hudson Egg Farm, LLC - February 24, 2011

On February 23-24, 2011, the FDA inspected Hudson Egg Farm, LLC, a chicken egg farm located at 1812 Route 5 East, Elbridge, NY 13060-9747. Mr. Peter J. Hudson is the owner.

The inspection revealed three observations:

1. **Lack of Biosecurity Record Keeping:** The firm did not maintain records documenting compliance with biosecurity measures. Specifically, biosecurity procedure guidelines for boot dipping stations and protective clothing lacked record-keeping to monitor employee compliance. While employees signed agreements to comply, there was no monitoring to ensure adherence to the SE plan guidelines.

2. **Improper Egg Transportation Temperature:** Eggs were not consistently transported at or below 45°F beginning 36 hours after the time of lay. Egg transport monitoring records from July and August 2010 showed multiple instances of temperatures at 46°F or 48°F, with no corrective actions recorded. The firm's procedure states that a truck refrigeration unit must be removed from service and repaired if temperatures are not maintained.

3. **Incomplete SE Plan Documentation:** The written Salmonella Enteritidis (SE) prevention plan did not bear a date and the full signature(s) of the person(s) who administer the plan. The cover sheet for the SE prevention plan was not signed and dated by administration upon
