FDA 483 - Lamar Zimmerman - June 23, 2011

On June 23, 2011, the FDA inspected Lamar Zimmerman, a shell egg producer located at 204 Farmers Drive, Myerstown, PA 17067. The inspection revealed three observations.

Firstly, the firm lacked a written *Salmonella* Enteritidis (SE) prevention plan specific to the farm. From July 9, 2010, to December 31, 2010, the firm produced shell eggs for the table market without implementing an SE Prevention Plan. The current plan on file was dated January 1, 2011.

Secondly, the firm failed to maintain records documenting compliance with rodent and other pest control measures. Specifically, there were no records for fly monitoring from July 9, 2010, to February 13, 2011, and no records for rodent monitoring from July 9, 2010, to March 22, 2011.

Lastly, the firm did not maintain records documenting compliance with refrigeration requirements. The inspection found no records of monitored and recorded refrigeration temperatures from July 9, 2010, to February 22, 2011.
