FDA 483 - Lesher's Poultry Farm, Inc. - May 03, 2011

This FDA Form 483 documents observations from an inspection related to egg production and *Salmonella Enteritidis* (SE) prevention. The facility failed to test its pullet environment for SE within the required 14-16 week age timeframe; a sample from House 3 on August 26, 2010, was outside the September 2-16, 2010, window.

The firm's written SE prevention plan was not fully implemented. Fly monitoring was not conducted in House 1 and 2 from July 9, 2010, to September 5, 2010, and in House 3 from July 9, 2010, to September 20, 2010. Additionally, refrigeration temperatures for the egg cooler were not monitored from July 9, 2010, to September 30, 2010.

Eggs were not consistently held at or below 45°F beginning 36 hours after lay. A review of egg cooler refrigeration logs from October 1, 2010, to May 3, 2011, revealed 60 or more instances where the average temperature exceeded 45°F.
