FDA 483 - Peregrina Cheese Corp. - April 05, 2006

On April 5, 2006, the FDA issued a Form 483 to Peregrina Cheese Company, a cheese manufacturer located at 342 Ten Eyck Street, Brooklyn, NY. The inspection, conducted from March 27 to April 5, 2006, identified three observations.

Observation 1 noted the failure to properly store toxic sanitizing agents to protect against food contamination. Specifically, a corrosive cleaning agent was found stored in front of Tank #3, which contained milk, a raw material for cheese production.

Observation 2 cited the failure to provide sufficient space for material storage to maintain sanitary operations and produce safe food. Salt, a raw material, was stored on metal shelves commingled with packaging material. Additionally, approximately 50lb bags of salt and packaging material on the same metal shelving impeded access to aisles.

Observation 3 indicated that effective measures were not taken to protect against pest contamination. On March 27 and 28, 2006, a 1/4-inch opening was observed at the metal loading door in the firm's receiving bay, preventing a complete seal with the floor when closed, allowing pest entry.
